Valentines Giant Cookie

My Hubby and I don’t tend to celebrate Valentines day, however as I love to bake and he was out  in the morning, I decided to treat him and make him a giant cookie. This gooey, scrumptious cookie is easy to make and you can decorate it with whatever you have to hand. I raided my daughters sweet stash, which is always a useful go-to for decoration ingredients.

Ingredients

125g Butter

100g Soft Brown Sugar

125g Caster Sugar

1 Egg

1tsp Vanilla Extract

225g Self Raising Flour

100g Chocolate Chips

Method

Melt the butter in a pan and add in both the sugars, stir until the sugar has fully dissolved. Then set the mixture to the side to cool.

Pop the flour into a bowl and stir in the cooled butter and sugar mixture. Combine in the beaten egg and vanilla extract and stir altogether, then add in the chocolate chips.

As this was for my hubby for Valentines day, I used a spring form loose based Heart shaped tin. Pop the tin onto a baking tray without its base, and fill with your cookie dough mixture.

Bake at 180°C/350°F/Gas Mark 4 for 30 minutes. Once baked, leave to cool completely as it will be easier to take out of the tin. Don’t worry if some of the dough mixture has seeped slightly into the baking tray, you can trim this later.

Once cooled, insert a sharp knife around the edges of the tin to separate your cookie from the sides of the tin, please be careful whilst you are doing this. Once your cookie is out of the tin, trim the edges to neaten up – you can then nibble on the offcuts. Don’t worry if your cookie sinks slightly, mine did also.

You can then decorate your heart cookie if you so wish, it will still taste amazing if you leave it plain. I made up some buttercream using 125g butter and 250g icing sugar and mixed until combined.

I then raided my cake larder and found some mini marshmallows I use for hot chocolate, and I also acquired some Love Hearts from my daughters sweetie jar shhhhhhh

Decorate with whatever you wish. A cool idea would be to put cream in the middle of the cookie and then pop some fresh Strawberries on top. Or if you are feeling fancy, dip the strawberries into some chocolate and leave to set before putting on top of some cream, mmmm yummo.
