Coconut and Chocolate Oaty Biscuits

These coconut and chocolate oaty biscuits are fab to make with the kiddies. They are easy and quick to make, and the children can get their hands mucky rolling out the biscuits – delightful.

Ingredients

125g Butter

165g Light Brown Sugar

1 tablespoon Golden Syrup

2 Eggs

80g Desiccated Coconut

45g Oats

300g Self Raising Flour

Method

Cream together the better, soft brown sugar and syrup in a bowl until combined. Beat in the eggs and stir in the flour, coconut and oats until your dough is mixed together.

I then weighed out my dough balls to 20g each so I had consistently sized biscuits. Once weighed, roll into balls and pop onto a baking sheet, placing them with a good gap all around them. Using a fork, flatten the biscuits and bake in the oven at 180°C/350°F/Gas Mark 4 for 12 minutes. Once baked, leave them to cool on the baking tray for about 10 minutes before removing and popping onto a wire rack.

Whilst your biscuits are baking and cooling, you can make the chocolate fudge icing.

Ingredients

40g Butter

200g Milk Chocolate

Method

In a pan, pop in the butter and chocolate and heat until melted. Then set to the side and leave to thicken up.

Once your biscuits are completely cool, pop your chocolate fudge sauce into a piping bag. A good tip here is that you don’t need to use a nozzle for piping. Simply fill your piping bag with sauce and then cut off the end and begin piping.

These are really scrummy and tasty and so very easy to make. Give them a go and enjoy!
