These are always very popular and I love making these. They make the perfect gift, i’ve made them for mothers day, as a thank you gift for my daughters teachers, or just for a friend to cheer them up. They are great and so simple to make.
Ingredients for Cupcakes (this will make 7 muffin sized cupcakes)
4 oz Baking Margarine
4 oz Caster Sugar
4 oz Self Raising Flour
1 tsp Vanilla Extract
Ingredients for the Buttercream
250g Icing Sugar sifted
You will also need the following in order to make the bouquet
7x small disposable cups
Tissue paper in two different colours
2D Piping Nozzle
Preheat your oven to 150°C/300°F/ Gas Mark 2.
Cream together the margarine and sugar until light and fluffy.
Add in your eggs (remembering to add in a table spoon of your flour at the same time to avoid your mixture splitting). Bring together and add the remaining flour. Finally, add in your vanilla extract and combine.
Whilst you wait for your cakes to cook, begin making your buttercream. To make the buttercream, combine 125g soft butter with 250g sifted icing sugar. You may need to add in a splash of milk in order to get the consistency you require. Then as we are going to be making duel coloured icing, you will need to separate your buttercream into two separate bowls. Add in your colouring, I chose pink and yellow for my roses.
Once you have made your icing, pop it into an icing bag with a 2D piping nozzle and put the piping bag into a pint glass. The glass holds your piping bag in place whilst you add in your buttercream. Fill one side with your first colour and then add the other colour to the remaining side. You may need to pipe a little out of the icing bag before you start to ice your cakes so you get both the colours coming out together.
Once your cakes are cooled you can begin frosting. To pipe a rose, you need to start from the middle and then pipe clockwise until the rose has formed. Continue icing your other cakes until completed.
Now you have iced your cupcakes, you are now ready to make the bouquet to put them in. Firstly you need seven disposable cups, they need to be the smaller ones you can buy, as you will find the larger ones will be too big for the cupcakes to sit comfortably in.
Arrange your cups like the below. You will then need to carefully staple the cups together. All outside cups needs to be stapled to the inner cup so this becomes nice and secure.
This is what you should end up with once done.
Then grab one of your sheets of tissue paper and scrunch into the cups so you have a nice support for your cakes to rest into. Then turn your cups upside down, grab your other colour of tissue paper and cellophane and use sticky tape to shape into the bouquet. Now you are ready to carefully pop in your cupcakes.
