Fairy Cakes

These little fairy cakes are fab to make with the kids. Let them make the cake mixture (under your supervision). Let them lick the spoon and bowl whilst you are waiting for the cakes to cook. Lay out cakes on a table with icing and decorations and let them rock out. It will be messy, but they will have great fun and they will really enjoy eating something that they have made themselves. I love making these with my daughter.

Ingredients

6oz Baking Margarine

6oz Caster Sugar

3 Eggs

6oz Self Raising Flour

1tsp Vanilla Extract

Method

Preheat your oven to 150°C/300°F/ Gas Mark 2.

Cream together the margarine and sugar until light and fluffy. Add in your eggs (remembering to add in a table spoon of your flour at the same time to avoid your mixture splitting). Bring together and add the remaining  flour. Finally, add in your vanilla extract and combine.

Add some fairy cake cases to a muffin tray and split the mixture evenly into the cases. Bake for about 30 minutes.

Once cooked, pop onto a wire rack and leave to cool.

Whilst you are waiting for your cakes to cool, you can make your icing. Add some icing sugar into a bowl and add some water, a little at a time. Add enough water until you reach your desired consistency. I like my water icing quite thick, so if I find that i have added in too much water, simply add in some more icing sugar and combine.

Once your cakes have completely cooled, you can begin to decorate. Add a teaspoon of icing and spread over your cakes. Then decorate with whatever sprinkles, marshmallows, smarties etc you have and enjoy!
