Chocolate Sponge Cake

I love this chocolate cake recipe. Its a very rich chocolate cake and you can use it for anything, cupcakes, larger cakes or cake pops.

This recipe will either make 18 muffin sized cupcakes, or an 8 inch larger cake.

250g Baking Margarine

300g Light Brown Sugar

4 Eggs

200g Self Raising Flour

100g Cocoa Powder

1 tsp Baking Powder

Cream together the margarine and soft brown sugar.

Beat in the eggs one at a time, then sift in the flour, baking powder and cocoa powder at once,

then mix to combine it altogether until you have a light and fluffy cake mixture.

Line a tin and pour your mixture in. I tend to line my tins leaving some baking paper draped over the sides as you can use these extra bits as handles to remove the cake from the tin once cooked.

Bake atΒ 150Β°C/300Β°F/ Gas Mark 2 for an hour, until cooked through. Leave to cool and decorate however you like. Enjoy!
